Basking in the sun we’ve been blessed with of late it might not yet feel like it, but with the end of September comes a new season—and with a new season comes a new menu at The Hyatt-Regency—The Churchill’s revamped restaurant. Taking cues from the gardens of Chartwell, Winston Churchill’s beautiful Kent home, in the newly-named Montagu Kitchen executive chef Mark Sainsbury will celebrate the best of seasonal British produce.

Highlights include the Chartwell garden salad (curly endive, lamb’s lettuce, cicely, figs, apple, candied walnuts and Clawson Blue Stilton); pork belly glazed with homemade marmalade, served with winter veg and red wine sauce; and ‘warm textures of broccoli and courgette’ with hazelnut cream, ginger crumble and parmesan crisp—not forgetting the daily-changing dessert trolley, which offers new twists on quintessential British puds.
